Fresh Guacamole & An Impromptu Picnic

Getting outside is important.  It'll calm your mind, and the quiet of nature will foster connection between you and your family.  We get out of the house every chance we get, so lunch happened in the backyard today.  I put together some very simple food for Micah and I, and set it up on a platter.  Food always looks fancier when you put it on a platter!

Since Colt was napping during lunch time, we set up our picnic right outside his window so I could hear him if he woke up.  This was a super special time for Micah and I.  We don't get much alone time together anymore, so I savor moments like these.  When there is a new baby in the house, it's important that your older child's behavior is closely observed, especially if they are still babies themselves (Micah is 2 1/2 right now).  Micah has always been so sweet and caring towards his little brother, but sometimes he really does need some one-on-one time with his mommy.  His mommy needs it too : )


Lunch was turkey and cheese sandwiches served with fresh guacamole (recipe below), carrot sticks and white corn chips.  Yooommm!  Delicious guacamole!


Here's my recipe for enough guacamole for a mommy and toddler.  It's super fresh, light and summery tasting! 

1 avocado, sliced (save seed)
1 clove of garlic, minced
2 sprigs of cilantro (I REALLY like cilantro), finely chopped
1 green onion, chopped
salt & pepper to taste
a lemon

Mash all of the ingredients together with a fork in a bowl.  Cut the lemon in half and squeeze a little of the juice into the guacamole and stir (to prevent browning).  Save the rest of the lemon to squeeze in your ice water!  Plop the avocado seed on top of the guacamole.  My dad says this will also help with browning.  Pop it in the fridge while you assemble you other food to let the flavor meld together.
